Koicha is thick tea: about 4 g of matcha to 40 ml of water at 70 °C, a 1 to 10 ratio. It is kneaded rather than whisked, and it is always served hot.
Whisk 2 g of matcha into 60 ml of water at 80 °C, then add about 180 ml of milk. Iced lattes brew the same matcha as a half-water concentrate and go over ice so the melt does not thin the cup.
75 °C for usucha, 70 °C for koicha and 80 °C for a latte base. Boiling water scalds matcha and pulls out bitterness, so let a kettle stand for a couple of minutes if it has no temperature setting.
